Original display drivers vs. Windows update service's drivers

I heard several times on the UC in San Diego to avoid display drivers installed by the update service of the Windows 8.1/10 and use instead the “original” ones supplied by the card manufacturer.  My question is quite simple: “Why?”.

Windows drivers are not necessarily up to date.

I get an update notice from my manufacturer(s) whenever an update is available.  Mind you, I register my products which is not something that is routine.
