After I create a custom field in the Symbology window for the layer I am working with, I cannot get the layer to appear in the Legend once I insert one into the layout. For reference, the custom field I created looked something like this:
1: Name of Person Sitting There.
The custom field Arcade was this:
$feature.SeatID+ $feature.NameofPerson
