Extract data from a .csv file for nearest points

I have a set of files that are all .csv format, all with different data (soil, and various meteorological data) and all at different spatial resolutions. What I would like to do is create a file that corresponds to each input .csv file but extract the closest data to a set of points. I'm hoping this will leave me with a set of .csv files all at the same resolution. I have the points as a shapefile feature class but nothing I'm trying is letting me get what I need. Each .csv file has multiple columns of data that I need to retain so I can't (I think) use a raster file to be able to use one of the extract multi values to points tool. Does anyone know how I can do this?
