I was wondering how I make my shapefile's display symbology as "Categories Unique Values" default instead of "Feature single symbol".  What I mean is that it should be shown as categories with unique values (my shp file has only 7 unique values) as default when I opened it in arcgis.

One way is to define the symbology categorically and save the layer as a layer file (.lyr). The layer file will store the symbology information. Whenever you add the layer file to ArcMap, the same symbology gets displayed.

Another way is to export the shapefile to a geodatabase (File/Personal), and create subtypes. Once subtypes are created, whenever you add the feature class to ArcMap, it get displayed as categorical symbology (although the colour of symbols may differ).
