Volume Estimates with Raster Math

I am trying to use Spatial Analyst to estimate volumes by:

1.  Interpolate the Z value of a point file to a raster grid (e.g., thickness of a geologic layer).
2.  Multiply the grid by the area of each cell, to create a new grid that represents the volume of each cell.
3.  Sum the value of each cell to get a total volume over the area that I did the interpolation.

What I can't figure out how to do is sum the cells of the final grid.  I know I have done this in the past, but can't figure it out now.  I assume that I could open up the data table of the final grid, and then sum the value column, or use the Statistics tool.  But I don't have that option, as the option to open the data table, like one would use for a vector layer, is grayed out.

How do I extract the value data out of a raster grid?
