Can Network Analyst be used to route data based on the ESRI Online Data? I've been looking for info on this, but have not been to successful.
Basically, we've got a set of points and we need to build delivery routes our of, but the thought of generating and maintaining a GN from a streets dataset that is already available via our internal 'data appliance' or from the ArcGIS Online makes me shudder.

You do not need Network Analyst when working with ArcGIS Online routing service.
From ESRI Help:
In ArcGIS Desktop 9.3, click the Tools menu, point to Online Service, then click the Find Route button Find Route.
In ArcGIS Desktop 9.3.1 or higher, use the StreetMap toolbar and click the Find Route button (using online route services) Find Route.
Then add places by clicking on the map, click Find Route button in the Find Route dialog box. Set options as required and switch to View Directions tab in order to see the directions window.
