Using 10m DEM NRCS data to find if farmers' fields are flat or have topography

Hi,

 

I have 10 m resolution NRCS DEM data in ESRI grid format. I also have a shape file that contains farmer's fields as polygons. There are about 2500 farmers' fields. I want to use DEM data first to identify if fields is flat, little slope, moderate slope, and hilly. I don't have any idea to set up threshold for DEM data to make various categories. Kindly help on to it.

 

My second assignment is to find if farmer's fields can be classified as upland or lowland based on the landscape of that region but not based on the landscape of the whole studied region.

If you have a slope map in raster format and a vector layer of polygons representing the farmer's fields, use a ZonalStatisticsAsTable function in Arctoolbox (requires spatial analyst) to get a statistical summary of the information within the zones.  you can then start from there.
