Burn polygons of buildings and water into land cover supervised classification

Hi guys-

Been having a hard time with this one: I'm doing land cover analysis using supervised classification and the reflectance of some of the land cover types are really similar, like a pond and some shadows cast by the surrounding trees are identical. I can make a polygon around the pond so the reflectance doesn't need to mess up the rest of the classification, but how do I incorporate it into the final supervised classification raster? I want it to be a land cover type ("water") that I can then calculate using Tabulate Area along with the trees and shrubs. The same goes for the many rooftops that keep messing up the land cover classification and assigning "building" to bare dirt.

I've had folks suggest Raster Calculator and Mosaic to New Raster, but I haven't had any luck with those. Any other better suggestions? Just do some magic with Joins and Relates?

You could turn those areas to nodata
