Have you tried intersections.... and clip (clip is in the editor pull down button, but intersections... are in the editor command bar but doesn't automatically show up when you have the editor on your taskbar, it must be added to the editor toolbar through the customize tool. )? I will use it when I am using land use data and want to have only the land use changed for that one parcel instead of the entire land use polygon covering several parcels.
