To change the color of the symbols, right-click the symbol next to Template Question ?

Hi,

I am here to practice and learn new things... The only thing I have a trouble understand this and how do I get this to template ?

and scroll down to Number 6 and a very end of that says Note :

Could someone out here show me how to do this ? I do not see any template here on this exercise ....  HELP !!

The "symbol next to template" is on the Symbology pane:
