For example, I have a survey configured in dashboard in which individuals can update a date range. The name of the individual is already configured in the survey, they just need to update the date. The webhook is configured to include the name, and the date. However, the name is not appearing in the email, only the date.

I recently ran into the same issue.
What I find that works is in the Survey123 Website, under the Settings tab > Version...Check on that "Always use latest version" is on.
