Currently you can change the style, labels, and visibility range at the hosted feature layer definition. It would be nice to define pop-ups like you would at the web map level at the layer definition. This would allow for consumption of feature layers with customized pop-ups using the Javascript API FeatureLayer class instead of consuming a WebMap which includes the layers with customized pop-ups.
