I have created my callout labels and they look great for each of my point features, I have finished moving my points around and now have my labels looking how I want them to be. I have attached a quick video of this in action.
I thought I would be able to simply turn the outline and fill colors on the symbology to be NONE, but as soon as I do this the labels move back to directly adjacent to my point location, which removes the lead line and crowds the feature I am trying to label.
Has anyone noticed this in Pro before, and do you have a workaround for this?

Found my answer on page 2 of a Google search (you know your desperate if you make it to page 2!!).
Offset point labels—ArcGIS Pro | ArcGIS Desktop
It seems I had to enable maplex label engine, then measure my offset from Feature Geometry rather than the default Simplified Symbol.
Cheers
