You *can* export data to a text file using the GUI within ArcGIS Desktop.
You cannot however export to text with a toolbox, which I'd need to use in a Model/python script
I am puzzled as to why this functionality doesn't exist as a toolbox.
The Table to Table toolbox would be perfect for it, right now you can only export to dbf, gdb, mdb or info tables.
