The next-best thing to do is: 1) add the field to the source feature class in ArcGIS for Desktop then 2) re-publish the featureclass with the newly-added field
Be sure to give the 2nd publishing the same service name as the original, so it will completely overwrite the original service definition and features on ArcGIS Online.
