Edit a single attribute field in ArcGIS Online service?

I'm trying to create a simple web map that will allow field techs to update only 3 attributes out of about 20 attributes within a single feature service.  I can create a service that is editable, but then all my fields are editable.  Does any one have some experience in creating a web service where only a few attributes are editable? Thanks!

In  Web AppBuilder, the 'Edit' widget allows you individually select specific data columns to display and whether or not you want those columns to be editable.
