I have a few maps that I would like to share with members from outside of my organization on ArcGIS Online. Is it possible to limit their roles so they can't edit the data (i.e. view only)? are there any group membership roles I can use/create to achieve this?

Instead of limiting the users role, I would suggest limiting the editing capabilities of the layer using hosted layer views:

This way you control how the content in your app is accessed by who the app is shared with instead of creating a custom role for each user that you must manage. Build the app and layer with all the needed capabilities that the consumers. There is an edit privilege that can be applied to custom roles, but these do not apply to editable apps shared with everyone.

Thanks for the response Kelly. This is the approach I will take.
Doesn't each AGOL user have a single role assigned for all content in the organization?
In other words, a user can't be assigned one set of privileges to one hosted layer and a different set of privileges to another, correct?
