Arcscene 3D Extrusion by Field?

I have extruded 3D layers in arc scene by a chosen field, but I loaded a layer today that has a field I want to use for extrusion and have a different (limited) set of options available that are not helpful.

First, I see "Layer Symbology" instead of "Layer Style" when I right-click the layer.

Layer symbology does not give me access to my published symbolization, nor does it give me access to any fields that provide numbers I want to use for extrusion.

Why is this layer so constrained? It is a simple polygon feature layer.
