I have a date filter in my instant app but I want the dates to be formatted to DD/MM/YYYY instead of the default MM/DD/YYYY.
There seems to be a problem with instant apps not honoring the date format in the web map. As I have correctly set the dates to DD/MM/YYYY in the map...
If anyone knows how to fix this problem I'd greatly appreciate it.

What are the settings in your ArcGIS Online/Enterprise? What date format is it following?
Organisation > Settings > General > Organisation Defaults
It looks like there could be an issue with the filter component updating to match the date format of the app.There is a documented issue tracking this.

My Organisation settings are as follows:
The Time Reference in the feature service layer details is also set to AUS Eastern Standard Time. e.g.
@BethRomero is this error also for the popup as it doesn't honor the date format if it is a field list e.g.
It does however honor the date format of arcade scripts?...
Thanks for sharing, I just tried to create a new date field on my data and found that even though my settings are in UK format the date still defaults to US mm/dd/yyyy
This looks like it could be a defect of some kind, can't see anything logged at the moment, I would recommend reaching out to your distributor to have a case logged and look into this further.
