How can you edit JSON with an on premise server

Is there a way to edit the JSON code after it has been published as a map when working with an on premise server?  Going through ArcGIS.com to get the JSON code is royal pain, seems like there ought to be a better way.

Esri - do you have any other documentation related to publishing a map with an on premise server besides this one? http://help.arcgis.com/en/arcgismobile/10.0/apis/iphone/AppGuide/Maps.pdf

On your arcgis server installation, go to the place where your arcgis mobile content is published. By default, I think this is \inetpub\wwwroot\ArcGIS\Mobile\ItemsRoot\<map_id>.

In the folder named <map_id> you should have a text file with the JSON content.
