Is there a way to set which columns are visible by default for a table widget when using the "View in Table" or "Add to Table" actions in Experience Builder?
I have a blank table widget that has no sheets by default. This is so users make use of the actions in the map widget and query widget that will add their selection or query results to the table. However when adding those records to the table widget, it displays all fields in the dataset. I want to be able to set which fields are disabled in that table view but I cannot figure out a way to do this unless I actually add and configure a sheet to the table widget in ExB which is not what I want.

Have you tried hiding the fields on the layer? Here's a method for doing it on a Hosted Layer, but there are methods for non-Hosted Layers as well.

Hi @JeffreyThompson2 yes, I ended up just choosing which fields were visible on my layers in ArcGIS Pro and then overwriting my web layers and that did the trick for our non-hosted stuff. Thanks for the info.
this should give u some insight on how to customize ur table (or sheet to be specific) at runtime or limits column. Hopefully that helps
