So, in google earth you could simply enter coordinates, such as,
46.078935 | -121.929077 |
and it would plot the point for you. I can not get this to work in ArcGIS Earth. Anyone have any suggestions?

This is one of those not-so-humorous-to-the-end-user items.
Google (and the entire aviation world...) uses the format Lat, Lon. Many GIS types prefer Lon, Lat. You can guess which got implemented.
We already have it in our requirements to allow the user to set a preference to have Lat, Lon which we will consider for one of the upcoming releases.
