I require some sample map server files which can be viewed
through Adobe Flash builder 4.5.
By default Adobe Flash builder 4.5. uses the mapservers
from server.arcgisonline.com.
How can I download these mapservers or similar mapservers
for use from my local ArcGIS server (version 10)?

From your question I'm gathering you have not worked with the a viewer + api and ArcServer much before?

Lets clear some things up first (I'm not meaning to insult if you already know this, however from the phrasing of your question I'm unsure):

? Flash Builder isn't making the map server choice, it's the default configuration of the ESRI Sample Flex Viewer built upon their Flex API for ArcServer. This settings is found within the config.xml file, under the <map> : <basemaps> tag. More information: http://help.arcgis.com/en/webapps/flexviewer/help/index.html#/Main_configuration_file/01m30000001800...

? Map services (from ESRI, and usually from others as well) cannot be downloaded and utilized on your own ArcServer in the way you are specifying (by downloading them directly). You can freely consume those services based on licensing usually.
However, you could create/generate your own .mxd file referencing your own imagery, creating a map service within ArcServer and loading that service into the Flex viewer as in the above link. This will allow you to host your own basemaps. There is great imagery available at http://www.naturalearthdata.com/ to use as a base if your unsure of where to acquire these.

As well, keep in mind that FB 4.5 and the newest SDK are not officially supported and still have problems: http://forums.arcgis.com/threads/29750-Flex-SDK-4.5-support
