Does anyone have a live demo of this widget, I have been trying to make it work with but having issues. However, I would like to see a demo of how it works.....

There is not a demo site for this widget as there would be nothing to see. The LocalLayer widget just adds layers from your local ArcGIS Server without having to add them to a web map. The LocalLayer widget is a panelless widget so it has no UI in the app to see. What trouble are you having? Have you closely read all the setup steps in the readme.md on the github page? This is not like installing other custom widgets because there is no UI.
