Reproducing an Interactive "Summarize" in Model Builder

There is a simple operation I can do manually, but I can't reproduce in Model Builder. There are some answers on this forum from 4 years ago or more, but some of the buttons or fields they describe don't seem to exist any more. Or I'm just missing something.

I have a table (catch.dbf) which contains fisheries data. The important fields are BLOCK (a location ID), SPECIES (a code for fish species), and SUM_95_99, which is the number of pounds of fish caught during those years. I just want the total number of pounds caught in each BLOCK and the number of blocks (which is equal to the number of unique species in this case).

Interactively, this is dead simple: Open the table, right click on block, pick Summarize, open SUM_95_99 and pick SUM. Click OK. A new table appears with exactly the fields I need.

None of the tools I found by searching have this interface, and I can't figure out how to use them to get the same result. Perhaps there's a better way.

Use Summary Statistics—Help | ArcGIS Desktop tool. It is in Arc Toolbox > Data Management Tool> Analysis > statistics .
