I have tried to do this before with the LGIM and there is no way to add other parcel types to the tree that appears in your Table of Contents.

I have had some moderate success with adding new domains to a basic parcel fabric and utilizing custom definition queries to make a customized display for my data that does not nicely fit into the LGIM. For example, I maintain parcels that represent municipal utility districts and there's no built-in layer definition for that in the LGIM. So the MUDs go into my customized basic fabric that is stacked above my LGIM with my subdivisions and tax parcels in the Table of Contents.
