I have used several different options including right clicking and selecting Calculate Statistics and using the Build Pyramids and Statistics option in ArcToolbox. For one of my mosaic datasets it is not calculating statistics for the overall mosaic dataset but when I check the raster images in the footprint file, each image has statistics calculated. So I can do a stretch using the From Current Display option but not using the From Mosaic option. I assume after I load all the imagery into the mosaic dataset, I should run Build Pyramids and Statistics option in ArcToolbox (forcing stats and pyramids on the source data as well but only for the 1st time) and stats will be calculated for the mosaic dataset.
