I would recommend using the </SPAN><A href="http://resources.arcgis.com/en/help/main/10.1/index.html#//00q90000006m000000">Interpolate Shape</A><SPAN> tool within 3d Analyst and then use the </SPAN><A href="http://resources.arcgis.com/en/help/main/10.1/index.html#//00q80000009p000000">profile graph</A><SPAN> toolbar button.
