Simply because currently we do not have an existing geoprocessing tool; which you would be able to use from within the model. As an option though, I was able to locate some documentation, where you could do this within arcpy. You are able to use the Cursor and Update Cursor functions, from within arcpy and I am including the help documentation for you on this.
