Other times when this happens I would just restart the editing session or restart the program it it would fix it. This isn't the case now. The polygon goes from being really detailed with a lot of vertices to simplified with vertices every 5 meters or so. I've tried restarting Arc, editing different layers, restarting my computer, clipping (through the editing toolbar), every work around I can think of and same result. Its probably just some setting that I don't know about.
