Model Builder resetting fields (sometimes)

No hair left so not sure whether to scream or just walk into the ocean.

Using the current version of Pro. Some of these were most likely written back in 2.9

The idea was to make these models run from anywhere so they are not tied to a specific project. (I did this with the old ArcMap ones as well and it worked)

I made sure that each of these models accesses data that has been dragged from the catalog with the full path (i.e., none of the FCs are in the model and the db connection is always in the same place). If I open the model in one project (which may or may not be the one it was written in, this was a while ago) it runs correctly with the field names changed.

If I open it in another project it shows the original field names:

Which of course breaks it. This happens with the other models I built as well. I spent a *lot* of time on this (probably 15 to 20 models). What is going on and is there a fix?
