topic Stack profile planar vs geodetic in ArcGIS Pro Questions

I'm using imported LIDAR data to export 2D cross-sections that I then use to evaluate the stability of slopes (geotechnical engineer). I'm using the stack profile feature. I compared the output to some actual surveys topos I have and the results were noticeably different. I then used just the basic measuring tool in gis to measure the roof of a nearby building and compared it to a linear measurement in Google earth. In GE, the building measured about 45 meters. In ArcGIS, the building measured about 70 meters. I noticed the measuring tool was set to planar. When I switched it to geodesic, it matched GE perfectly.

How can I adjust the data obtained with the stack profile tool so that it gives geodesic measurements? Open to other options.

Secondary question, why is there such a significant distance between the two over such a short span?
