In the Symbology pane, choose "Unique Values" for the Primary symbology. Click the "Add field" button and then set one field to your observed/not observed attribute and the other to the species attribute. It will create a list of all the possible combinations and then you can set the symbols.

I am trying to symbolize plant point visits, I want to know if it's possible to symbolize from two attributes. The shape of the symbol would be based on Observed or Not Observed, with the coloration of the symbol being species based, with every species having a different color. So the same species in different locations would have the same color, but in one location it would be one symbol for observed and a different symbol for not observed. ie, blue square in one area, blue circle in another area.
