LIDAR to Raster - why is it producing empty datasets?

I'm using ArcPro 2.8 to take lidar datasets and convert them to three raster layers representing ground, first returns, and last returns. I'm using a modelbuilder model that has worked for many other las datasets. I'm redownloaded the LAZ files and reconverted them to LAS to check there wasn't an error in the original input.

The high and low values are below for each of the rasters are below.

Does anyone have any idea why I'm getting these results and how I may fix it?

Morning @Cha. Diagnostically speaking, those values shown on the colorbar (3.402e^38) are the limits of Floating Point 32 or 64 bit (can't recall which?). Try limiting the range of that colorbar to an expected or known range where lidar elevations from the points exist. For example, 2,000 - 2,500 feet. If that displays pixels that resemble a DEM/DSM, then I imagine the NaN values from the lidar or those of the newly-created DEM are not recognized by ArcGIS. Try the scalebar limits route first and let me know if the DEM has data.
