So, I have multiple datasets, containing two variables: name and income (with max value varying). I wanted to apply symbology to each dataset on the income variable and combine all of them. I later want to be able to select by name and depending on the name chosen, it would display the symbology and legend for that dataset. I'm not sure if this is applicable in ArcGIS pro. I'm basically going to be importing these layers into ArcGIS Experience Builder and using the search button to filter the names

I'm not sure I fully understand what you're looking to do, but to combine all of them into one dataset, the Merge tool is your friend. If you're looking to copy symbology from layer to layer, R-clicking the hamburger menu of the symbology pane > Import Symbology will help.
