Erik - there is "BUG-000101854 - The export-to-prj-string function does not produce an exact copy of the projection definition in the output PRJ associated with a shapefile" from Support Services. From what I'm reading it does not appear (as of 2017) that this will be addressed in the software. I searched ArcGIS Ideas and did not see an existing idea posted. I would recommend creating an ArcGIS Idea on this item so it gets traction with the ArcGIS Pro team.

I am trying to figure out if there is an option to automatically add the AUTHORITY attribute (AUTHORITY["EPSG","25833"]) to the PRJ file when exporting. Apparently there is an option for this in GlobalMapper, but I don't seem to be able to find it in ArcGIS Pro.

The reason for wanting this is interoperability with Agisoft Metashape. The current workaround is deleting the PRJ or adding the AUTHORITY tag manually, both of which are bad practice Imo.
