As a note, the symbol used was stylized from the FONT option, not the SYMBOL option (does that make a difference? If so how do you import the ESRI fonts into the symbols in Pro?). Why do the symbols change upon export, and why does the logo become blacked out? In case anyone else runs into this I'll write what i found.
