You could add a new database connection with that version set in the properties and then add the data layer that you want from that version.

Is there a way I can use change version and apply to only one map? When I do change version from the versioning ribbon tab, it applies to all layers in all maps, not just the currently visible map (except other map's datasource is not updated until you switch the list by in the TOC.)

Maybe you could appropriate a certain layer in a different workspace, then change the version?
