In ArcMap there is an option within the Fields view to reset the default field order. I believe it would be nice to have the same functionality within Pro.

Quite agreed. I often find myself making changes to field order, alias, etc only to decide it isn't going to work the way I want. And rather then re-adding a feature and having to re-work labels and symbols it would be nice to simply reset to defaults.

In the attribute table's menu , there is a 'Reset Field Order' button:

I understand that this is not within the Fields view, but would this achieve your goal?
