Collaborative editing of feature layers: adding new fields

I am trying to display antibiotic resistant genes found in different sampling locations using ArcGIS Online maps and dashboards. Ideally, my hosted feature layer would be editable to people within my group, so that multiple people can input data for their sampling location.

I currently record data in a table with different columns / fields for different genes, and a 1 to record their presence and 0 if they are not present. This way I can sum them for figures or display them in charts for my dashboard. But because they are recorded in this way, I need to add new fields when new genes are added to the data, e.g., MuxB was found in sample site 3, but not 1 or 2, so I add a new field, record a 1 for sample site 3 and 0's for sample sites 1 and 2. The data doesn't record any quantity of a gene in a sample, just if that gene was present and where.

I can't think of a way to organize the data without adding new fields. But because the new data sometimes requires a new field because of a new gene, I am having difficulty setting the layer up to be editable to others.

The "Update Data" tool on ArcOnline I found to only be usable to the owner / admin of the layer. And if I enable editing on my hosted feature layer, it allows members to add new sample location points or edit current fields, but once again, I found that to add new fields (for the new genes that may be recorded), you have to be the owner / admin of the layer.

I am just starting to look into ArcGIS Field Maps, although I am not quite sure if that would work or not.

Here is how I am currently recording data to better visualize:

Any insight or ideas on how to set up collaborative editing with adding new fields, or how to set up my data to avoid this issue, would be very much appreciated. Thank you!

The layer & maps could be shared to a shared update group. There the members within that group could add fields. You can add the fields through Map Viewer or the item data tab. Use field calc to bulk apply a number if needed.

https://doc.arcgis.com/en/arcgis-online/share-maps/create-groups.htm#ESRI_SECTION1_12B3CD7ADAF843DB90182A01824B3152

https://www.esri.com/arcgis-blog/products/arcgis-online/data-management/adding-deleting-fields-in-map-viewer/

https://www.esri.com/arcgis-blog/products/arcgis-online/data-management/introducing-calculate-field-in-map-viewer/
