Is there currently a way (or planned) to export the tables in ArcGIS Online? We have an organizational account and our departments have asked about the functionality.

Maybe you could write a python script that downloads the data and then turns it into a table? This might help you with the getting the feature from ArcGIS Online.

For hosted feature layers, you can export to shapefile and CSV from the item details page of the layer.
