User access to Dashboards

Hello, I have created several dashboards for different people. Is there a way I can give each person access to "their" dashboard without the having access to the other ones? I can add viewers to the account but don't know how to isolate their access to a specific dashboard application.

Take a look at Sharing in ArcGIS Online. You will create different groups and share the dashboards, maps, and data with these groups. When you invite a person to a group, they will only see what's been shared with them.

Okay, so if I add/share a dashboard with a particular group, do I have to also share the web maps and feature layers as well?

Yes you do. You can also make hosted feature layer views if you want to restrict what a group can see or do with a feature layer. You would share that hosted view instead of the feature layer.
