There are numerous ways to produce a contour map depending on your license options

Search Result | ArcGIS Desktop

once done, make a layout at the desired scale

The principles are the same, you will have to adapt them. The scale issue isn't about contouring, but about making a map from the results (aka a layout issue)

yes of course but I need the interval of contour [10,20,30?} that i generation on DEM.....[in the end for scale 1;250.000]

You will only get those elevation values when you specify them and your data is within that range.

Perhaps you should show what you have tried

For map in scale 1;250.000 the interval of contour is 250 ?
