topic Fitting a variogram model in ArcGIS GeoStatistical Analyst Questions

Hello everyone!!!
I am trying to create an error map for 2m LiDAR DEM based on the RTK-GPS measurement points collected from the field. After exploring and removing the outliers, my data is now very close to normal distribution and there is no trend in the data. I now want to perform the variogram analysis and do ordinary kriging for the error values at 218 sampled locations to create error maps.
I am not confident enough to analyze the spatial structure of my data, how to fit the variogram model, how to look if there is anisotropy. How to use the tools related variogram fitting properly. I have attached the data also for reference.
Any feedback, suggestions is very much appreciated
