Depending on what version of the mobile tools you're using, you can also specify the extent in the tool.

I don't think any other way of 'clipping' in ArcMap is honoured when using the Create Mobile Map tool.

John

Hi,
Can anyone tell me why my mobile project is displaying data that I have clipped before creating the mobile cache? The clipping works correctly within ArcMap:
but doesn't 'stick' when I open the cache within Mobile Project Centre:
(Arc 10.1.1.0)

Thanks John, I appreciate your input in backing up what I have concluded.
The extents work fine, but I was hoping I could clip away any data I didn't want to see within that extent-as I do in ArcMap. I have discovered, unfortunately, that ArcGis for Windows Mobile doesn't allow that. This, along with the inability to display labels that include expressions, has been very frustrating.
