Is ArcGIS Enterprise fully supported and compatible when deployed on Nutanix hyperconverged infrastructure? Are there any specific configurations, licensing considerations, or technical requirements we must satisfy to ensure seamless compatibility and official support from ESRI?

Nutanix AHV is not explicitly listed as a fully certified/tested hypervisor for ArcGIS Enterprise in the same way VMware vSphere and Microsoft Hyper-V are.
In practice, some organizations run ArcGIS Enterprise on Nutanix AHV:
Running ArcGIS Enterprise on Nutanix - Esri Community

"All components of ArcGIS Enterprise are fully supported on virtual environments as long as they run on supported operating systems." Deploy ArcGIS Enterprise on virtualized hardware | ArcGIS Enterprise on Windows and Linux documentation
However, there can be a difference between what is technically supported (in the sense that it works), and what is officially covered by support.
Esri Support could decline or limit support for issues they determine are caused by the underlying infrastructure, particularly if the deployment runs on an environment that is not explicitly certified or officially validated by Esri. (This is generally true for most customers, although some organizations may have specific support agreements or validated deployment arrangements with Esri or their local Esri distributor.)
This could be the case for performance related issues for example, as they can be depend on the infrastructure.
But just running AHV on Nutanix, there should not be an issue if you run supported OS versions, as it is quite similar to the supported environments. "A lack of inclusion on the list above does not imply that an environment or specific version is not supported; it means that it is not an environment or version that Esri or its partners have explicitly tested."
To get a definite answer on what will be covered by support and what not, best contact your local Esri contact directly.

You should also review your licensing, as ArcGIS Server licensing is based on the number of cores/physical core equivalents.
