We are trying to assist a colleague with poor internet connection update their licencing for ArcGIS Enterprise. As a first step we would like to upgrade their Enterprise version from 11.1 to 11.2 but we are not sure how to go about this. Are there some steps somewhere that indicate how we would go about this?

There is a comprehensive article of steps available here: https://support.esri.com/en-us/knowledge-base/how-to-upgrade-to-arcgis-enterprise-11-x-000029452

I recommend taking many backups throughout this process if you haven't/have upgraded Enterprise before.

To elaborate a little on what @A_Wyn_Jones said, backups are highly recommended. I'd do a server flash if possible (get your IT to help). If something goes wrong, you can revert to a stable per-update environment relatively quickly and easily from a flash. Failing that, Esri's built-in back-ups are always an option.

Also, I'd recommend keeping detailed notes of what you do and what URLs/accounts are used. Esri's steps are great, and referencing them is advised, but nothing beats good old personalized notes. This can be super helpful for future updates and problem resolution.
