Yep, I used to do this all the time. As long as nothing being edited is a non-hosted (ArcGIS Server) service, you will end up with copies and any edits to the data will be completely separate from the source.

Hello,

I have a series of Survey123's, dashboards, and web apps as well as all of the associated feature layers set up for a region in my company. I would like to duplicate everything and make some small changes for another region to use. They would still need to be hosted within my organizations AGOL. Can I use the Clone method to accomplish the duplication while still being able to modify some of the fields in the feature layers?
