Instead of dropping the table attributes when using the XY to Line tool, include an option to have the attributes included in the finished table. This concept should apply to the Bearing Distance to Line Tool as well.

The ID field is optional but if you can select it then you can use it to join the data back. You could wrap this up in a model to create a seamless tool?

This makes sense for the Bearing Distance to Line tool, which has a One-to-One relationship between the output line and the input XY points. It does not make sense for the XY to Line tool which has a One-To-Many .relationship between the output line and the input XY points.
Although the LineID field would be consistent on a line if that option is used with the XY to Line tool, nothing prevents other attributes from have different values from one vertice to the next on the same line. How is the tool supposed to interpret that data? The summary rules will depend on the attribute's relationship to the point and line, which often differs field to field. Some attributes should result in a Sum of the vertice values, others should result in the Min, Max and Mean of the vertice values, others should use the First vertice value, others should make a delimited list of unique vertice values, etc. Deciding what to do with the One-To-Many relationship between the output lines and the input vertice data attributes is the responsibility of the user that created the data, not the tool's, and should be done in a separate Summary process after using the XY to Line tool.
