There is no simple circle-Symbol in the "Legend Item Properties - Override Default Patch" for a polygon feature. We often need a simple circle-symbol
You can use the Ellipse patch shape or you can create a circle patch shape yourself.
To use the Ellipse patch shape do this: 1. Open the Legend Properties dialog and select the Items tab 2. Right-click on the layer in the list on the left and select Properties 3. In the Legend Item Properties, General tab, right-click inside the graphic depiction of the patch shape and select Properties, then uncheck Preserve aspect ratio. click OK 4. Check "Override default patch shape" and set the Width and Height to the same value (the size you want your circle to be). 5. OK out of the dialogs and you should have a circle patch in the legend for the layer. One small drawback to using the ellipse shape for this is you have to make sure you set the patch shape width and height to the same values.
To create a circle legend patch shape yourself do this: 1. Go to the Customize menu and select Customize Mode 2. Select the Commands tab, select Page Layout from the Categories list, and then find the New Legend Patch Shape tool under Commands. 3. Drag that tool onto a toolbar. 4. In a layout draw a circle with the graphic drawing tools 5. With the circle selected click on the New Legend Patch Shape tool 6. In the New Legend Patch dialog adjust settings as desired. For a circle I would suggest leaving Preserve Aspect Ratio checked on. 7. Click Add to Styleset, give it a name and click OK, then Close the New Legend Patch dialog and you're set go. You should have your new patch shape available to use in your legend. The advantage of creating your own circle patch shape is it is a circle so you wouldn't have to make sure you set the patch shape width and height to be the same.
I understand that this is an old request, but wanted to point out that circle was implemented as part of the standard symbol/legend patch options in ArcGIS Pro!
